Cauliflower Tofu Sriracha Stir fry

So I pretty much think that Sriracha can make just about anything taste better..and this dish is no exception! This vegetarian dish is surprisingly delicious, with flavors, textures and colors bursting from each bite. 

I have recently been modifying my diet to reduce sugar intake and I have almost eliminated processed foods from my diet completely. My newest modification has been limiting the amount of meat I eat throughout the week. I have no problem eating most meats, but I also know that meat is typically higher in fat and cholesterol than that of plant based diets. A simple adjustment such as “Meatless Mondays” can help you kick start a healthier lifestyle as well. Taking one day to cook a meatless meal will not only reduce the fat/cholesterol/calorie intact, but it also will help you eat more veggies and alternate sources of protein (beans, tofu, tempeh etc).

Ingredients for Stirfry
1 head of Cauliflower (chopped into small florets)
1 block of extra firm tofu (preparation for tofu listed below)
4 Tbsp of Canola oil (divided)
1 green onion
5-6 sweet peppers (chopped)
2 garlic cloves
1 Tbsp rice vinegar
Juice of one lemon
2 Tbsp of reduced sodium soy sauce
Sriracha to taste
Chili paste to taste

Ingredients for salad
2 cups of red cabbage
2 cups of kale
Parsley or Cilantro (chopped)
1 avocado
Juice of 1 lemon
Salt/Pepper to taste
Instructions
1. Prepare Tofu: Remove tofu from liquid and wrap in paper towel and then with a kitchen towel. Place on a plate and place a heavy object (sugar container, milk jug etc) on top of the tofu and place in the refridgerator for several hours. (I normally just do this in the morning before heading out to work).
2. Chop cauliflower into small florets (you may want to remove the fibrous spin portion)
3. In a large skillet, over high heat, heat 2 Tbsp of Canola oil
4. Saute the cauliflower for several minutes, continually string the florets to coat them in the oil.
5. Allow the cauliflower to get brown edges with a nice golden color before moving to the next step (10 mins)
6. While the cauliflower is cooking, begin to prepare the tofu. Now that it has been strained of the liquid, you will get nice crispy tofu!!
7. Slice into 2" pieces
8. In another skillet, heat 2 Tbsp of Canola oil over high heat for several minutes so that when you add in the tofu it sizzles
9. Place the tofu in a single layer in the skillet and allow to cook for about 5 mins before flipping (tofu should be golden and crispy before flipping it). Continue cooking on the other side as you continue making the stirfry. Once it is done, lower the heat to keep it warm until the cauliflower stir fry is done.
10. Add in chopped garlic and sweet peppers to the cauliflower stir fry, and stir to incorporate evenly.
11. Reduce heat to medium/high and allow to cook for 2-3 mins
12. Add in half of the green onion (save the other half for garnish), soy sauce, rice vinegar, lemon juice, chili paste and sriracha
13. Reduce heat to low and allow to cook for another 5-10 mins
To prepare the salad, mix in all the ingredients and toss in lemon juice/salt/pepper
Assembly
1. Place salad on the bottom of the bowl
2. Add in the cauliflower stir fry and top with tofu
3. Garnish with remaining green onion, soy sauce, sriracha and cashews!!

This stir fry is super easy to prepare, and can be made with endless amounts of variations. I served mine over a kale and red cabbage salad, but white/brown rice would make for a heartier alternative…for something on the lighter side, quinoa or barely would work nicely too.
