Winter is here…the chill is definitely in the air here in San Francisco. I love the holiday season, all the lights and decorations, people bundled up in coats and scarves..just feels like Christmas time! Now that the cold weather is here, it’s time to break out your dutch oven cookers and start preparing stews and other dishes that will warm you from the inside out.
I love experimenting with new cuisines. Putting a twist on traditional Persian, Vietnamese and now Indian dishes, allows me to be creative, without too much effort. As a full time dental resident, I don’t have a lot of time to spend in the kitchen. My goal is to prepare hearty, healthy meals in 30-45 mins. If the meal needs additional time to simmer, I strive to make meals with minimal prep time, where the food can cook over low heat while I get work done.
This stew was so simple, I almost felt guilty posting it, but it was soooo delicious I couldn’t resist. I used a store bought marinade from Sukhi’s Natural Authentic Indian Cuisine. This line of products is available at most stores across the country. Check out the website for great recipe ideas, products and store locations near you.
The marinade is traditionally used for chicken that will be grilled, but I used it for this stew and the flavors were amazing! Greek or Plain yogurt is added to the marinade, and poured over the chicken. I allowed the chicken to marinate overnight, but you could also prepare it in the morning before work as well.
Tandoori Chicken and Butternut Squash Stew

Serves 4
1 yellow onion (diced/chopped)
2 chicken thighs or breast (I used thighs)
1 packet of Suhki's Tandoori Marinade
2 Tbsp of Greek/Plain yogurt (plus more for serving)
1-2 Tbsp olive oil
Salt/Pepper
1 butternut squash (peeled and cubed)
1. Mix yogurt and marinade until a creamy consistency is achieved.
2. Pour marinade over chicken/cover and allow to marinate overnight or at least 4 hours
3. Over medium heat, pour olive oil into dutch oven cooker and allow to simmer (1min)
4. Add in chopped onions and allow to caramelize over low heat (15 mins)
5. Pour the chicken and remaining marinade into the dutch oven, allow to cook for 15 mins over low heat
6. Add in the chopped butternut squash, stirring all the ingredients together to incorporate the marinade into the squash….at this point it will look like you need to add liquid..but don't do it. When the squash cooks down it will provide the water that you need to create the stew.
7. Place the lid over the dish and low to cook for about and 1hour…more is fine too, but at least an hour
8. Add salt and pepper to taste
8. Serve over basmati rice or naan with a dollop of greek/plain yogurt…ENJOY!!

The addition of butternut squash created a mild sweetness to the savory flavors of the tandoori. The squash could also be used without chicken for a vegetarian option. This one-pot-dish was quick and easy to prepare. I allowed it to simmer over low heat for about 1.5 hours while I did laundry and school work.
Pairing this stew with basmati rice and a dollop of greek yogurt was the perfect dinner for a chilly winter night. Serve this heart warming stew for your family this Sunday night, and I am sure they will be begging for more!
