Mediterranean Beef and Garbanzo Bean Stew

You know those days when you just stare into the refrigerator, hoping for a miracle dinner to magically appear? Ok…maybe I am alone in that…but there has been more than one occasion when I was really stretching to make a meal out of what I had in my fridge. 

This was actually one of those “what can I possibly make out of this” dinners. But…it  turned out REALLY..REALLY good. The tomato paste foundation with the addition of chipotle peppers in adobo created a smoky and savory sauce that coated the ground beef and garbanzo beans with loads of flavor. I added in juilenened zucchini and cherry tomatoes for a touch of veggies..and voila…dinner was ready in no time at all. Probably faster than I could even come up with a name for this mishmash of a meal…but whatever you want to call it…you will surely call it amazing!

Ingredients
2 Tbsp olive oil
1 yellow onion (diced)
1/2 lb ground beef
2 cans of garbanzo beans (rinsed and strained)
1/2 can of chipotle peppers in adobo sauce
1 can of tomato paste
1/2 cup chicken broth (beef/veggie will work as well)
2 zucchini's (shredded/juilenened)
1/2 cup cherry tomatoes (halved)
salt/pepper/paprika/Cheyenne pepper to taste
Parmesan cheese and parsley for garnish
Instructions
1. Heat olive oil over med/high heat in a large dutch oven (I used Le Creuset)
2. Add in onions and allow to brown, stirring occasionally
3. Reduce heat to medium, lightly salt onions and allow them to caramelize (7-10 mins)
4. Add in ground beef and allow to brown
5. Season with salt and pepper
6. Add drained garbanzo beans, tomato paste, chipotle peppers in adobo sauce and chicken stock- stir together
7. Add in paprika and cheyenne pepper ( I used about 1 tsp of paprika and 1/2 tsp cheyenne pepper)
8. Add in zucchini and cherry tomatoes about 10 mins prior to serving
9. Garnish with parmesan cheese and parsley
Notes
If you aren't rushing to get dinner on the table just allow to simmer with lid on the dish until ready to serve.

This is one of those dishes that doesn’t really need a recipe…be creative..substitute the veggies that you have on hand and feel free to throw in your favorite seasonings. Just when you think you have nothing in the kitchen…take a closer look and use these staple items to create a stew that is perfect for this fall season.
