Tired of the same breakfast routine? Cereal…Oatmeal…Granola bar on-the-go? These pumpkin muffins will get you going in the morning, and give you energy until lunch time.
I am always trying new combinations of flavors and ingredients to make muffins that are healthy, tasty, and satisfying. This recipe uses almond flour, instead of processed white flour, so even with that small alteration, you are getting nutrients that are often not found in muffins you may buy at your local coffee shop. The other great feature of this recipe is the use of Greek yogurt. I used 1/2 cup of 0% plain Greek yogurt, which made the muffins creamy and super moist, and even added a bit of protein.
Healthy Pumpkin Muffins

Yields 15
Quick and easy muffins that are a healthy start to your workday
6 tbsp softened unsalted butter
1/3 cup molasses
2 eggs
1 tsp vanilla extract
1.5 cup almond flour
1 tsp baking soda
1/2 tsp salt
1/2 cup fage 0% greek yogurt
1/2 cup pumpkin puree
1/2 cup sunflower seeds
1/2 cup pecans
1/2 cup semisweet chocolate chips
In a stand mixer with paddle attachment, beat butter, molasses and eggs together
Add in vanilla ( don't worry if the mixture doesn't look smooth, the molasses don't cream like refined sugar)
In a separate bowl sift together dry ingredients (almond flour/baking soda/salt)
Add in dry ingredients and mix until just combined
Add in greek yogurt and pumpkin puree and mix until just incorporated
With a rubber spatula, fold in seeds,nuts and chocolate chips
If you would prefer to eliminate the butter...I think that adding more pumpkin (about 1/2 cup more) would be a great substitution. I haven't tried this myself...but I would love to know if you do. Happy Baking :)

Like my guilt-free power muffins or the breakfast cupcakes, that I posted a few months ago, these muffins can be made with so many options. I added sunflower seeds, chocolate chips and pecan pieces to mine, but any variety of nuts, raisins, berries or seeds would be just as delicious. I love when I have a little freedom when I am baking, so if I am missing an ingredient, I don’t have to run to the store….I simply throw in what I have in my pantry…and make a creation of my own. This recipe is perfect for that…anything goes…as long as you remember the goal is to start your day the healthy way. Less sugar and more protein will keep you full, without the mid-day crash that sugary cereals or bars can cause. Take them with you on your way to work, or have them with some fresh berries and a glass of grapefruit juice, and you are on your way to a great day.

How long do they bake and at what temp?
