It never fails…around 3-4:00pm every Sunday I get a burning desire to bake. I love being in the kitchen, even if I barely have room to turn around in it! Something about baking, chopping, and preparing that just puts my mind at rest. I can’t wait for the day that I have my dream kitchen with a beautiful marble island and top of the line appliances…until then…I am happy to be in my little San Francisco kitchen. My husband and I always laugh and say…”well, I guess we are doing pretty good, if this is as bad as it gets.” We have a tiny little apartment, but we make the best of it, and I must say…life is good.
I have experimented with a variety of cookie recipes, and even entrees since having this blog. I am always brain-storming new ideas, trying to create delicious dishes that we will enjoy..and you will be excited to make. The idea of inspiring people to cook, and challenge themselves with new recipes and baking adventures makes me happy.
Peanut Butter Chocolate Chip Cookies

Yields 15
1/4 cup creamy peanut butter
2 tablespoons unsalted butter, room temperature
1/2 cup brown sugar
1 egg
1/2 teaspoon pure vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
8 oz semi sweet chocolate chips
1/6 cup granulated sugar (for sprinkling the top of the cookie dough before baking)
Preheat oven to 350 degrees.
Using an stand mixer with paddle attachment, cream peanut butter and butter in a mixing bowl until smooth.
Add brown sugar; beat until combined.
Add eggs and vanilla, and continue beating until creamy.
In a separate bowl, whisk together flour, baking powder, and salt.
Gradually add dry ingredients from step 2 to wet ingredients, beating on low speed until just combined
With a rubber spatula, mix in chocolate chips
Prepare baking sheet by lining it with parchment paper or lightly greasing it.
Place cookie balls 2 inches apart on a prepared baking sheet.
Sprinkle with granulated sugar
Bake until cookies begin to puff up slightly, about 7 minutes.
Remove from oven and allow to cool for a few minutes
I did not have brown sugar so I made my own...I thought this helpful trick might come in handy for some of you, if you don't want to make a grocery store run.
Simply measure out 1/2 cup of granulated sugar and 2 Tbsp of molasses and combine with a food processor until thoroughly incorporated. Use a rubber spatula in between cycles to scrape down the sides. Now...you have brown sugar! Worked perfect for this recipe.

The other thing that makes me happy is cookies! This peanut butter chocolate chip cookie is gooey and tastes like you are eating a Reese’s Peanut Butter cup. My mouth is watering just thinking about this little piece of perfection. The ingredients are few the preparation time is minimal…maybe even less than the time it will take for your friends and family to devour every last morsel.
