First…on Mother’s Day, I want to say Happy Mother’s Day to the best mom in the world. I am so lucky to have a mother who has been encouraging and supportive of every thing I have ever done. Not only is she an incredible mom, but also my best friend. I am fortunate, to have two mom’s in my life…my mother-in-law is one of the most amazing women I know. She is so thoughtful, caring and giving. I feel like the luckiest girl, to have two outstanding women in my life, that I can call mom. Thank you for all that you do! I love you both.
I love when I have friends/family or my blog readers, ask for specific types of recipes. It makes me excited that people use my blog as a reference for making their favorite foods. Recently, my cousin (well…my husband’s cousin..but I consider her my own family), ask me for a crumb cake recipe. I had never make crumb cake, so I was ready to take on the challenge of finding the perfect recipe.
I found an amazing recipe on ambrosiabaking.com. This NY style crumb cake is moist and incredibly delicious. This is by far the best crumb cake I have ever had…and the best part is the thick crumb layer! I mean..what is crumb cake without lots and lots of crumbs topping off the light and fluffy vanilla cake? And..I know I may say this often..but honestly..this recipe is extremely simple and takes no time at all to prepare.
NY Style Crumb Cake

2 tablespoons canola oil
1 1/2 cups all purpose flour
1/2 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, at room temperature
1/2 cup milk
2 teaspoons vanilla extract
2 1/2 cups all purpose flour
1 cup packed brown sugar
1 1/2 tsp cinnamon
1 tsp nutmeg
1 cup (2 sticks) butter, melted and cooled
confectioner's sugar, for dusting
Preheat oven to 325 degrees F, and position a rack in the middle of the oven.
Spray a 9x13 baking spray
In a bowl, whisk together the 1 1/2 cups of flour, sugar, baking powder, and salt. Set aside.
In a separate bowl, whisk together the egg, milk, oil, and vanilla
Add the dry ingredients to the wet ingredients, mixing just until the batter comes together. Pour the batter into the prepared cake pan, and set aside
Combine the 2 1/2 cups of flour with the brown sugar, and cinnamon and nutmeg
Add the melted butter to the flour mixture, and stir the mixture together until large crumbs form. Sprinkle the crumbs evenly over the prepared cake batter
Bake the cake until a toothpick inserted into the cake comes out clean, about 20 minutes.
Rotate the pan at least once during the baking time.
Remove the cake from the oven, and allow it to cool completely before dusting the cake with powdered sugar, and cutting it into squares
