Cinco de Mayo is a fun holiday to celebrate…just because it gives me an excuse to have Margaritas with chips and salsa!! I love Mexican food, but every time I eat it, I leave feeling guilty and extremely full!
This recipe has immense amounts of flavor and will satisfy the entire family, without weighing you down! The best part about this recipe, is you don’t have to follow much of a recipe. With burritos, you can add your favorite veggies and toppings to make your perfect combination. It is even great for large parties, where you can allow each person to create there own burrito…assembly line style. Simply chop the veggies and place them in separate prep bowls so all of your friends and family can easily select their favorite toppings.
Healthy Bean Burritos

Serves 6
2 tsp. canola or vegetable oil
2 cloves garlic, minced or pressed
1 tsp. chili powder
1 Tbsp minced chipotle in adobo sauce
¼ tsp. kosher salt
Dash cayenne pepper
1/3 cup water, vegetable broth or chicken broth
1 (15 oz.) can black beans, drained and rinsed
1 (15 oz.) can pinto beans, drained and rinsed or Refried Beans (I used refried beans this time because I had them in my kitchen, but I have made them with pinto beans as well...both work equally well)
6 Tbsp Fresh Salsa
6 (9- or 10-inch) flour tortillas, warmed
Shredded cheese
Diced tomatoes
Shredded romaine lettuce
Chopped green onions
1 small can of yellow corn (rinsed and drained)
Fresh Salsa
Low-fat sour cream or Plain Greek yogurt ( I used Greek yogurt and couldn't...tastes like sour cream but healthier)
To make the bean filling, heat the oil in a skillet over medium-high heat.
Add the garlic, chili powder, chipotle, salt and cayenne; stir, cooking just until fragrant, 30-60 seconds.
Add the beans and the water or broth to the pan.
Bring the mixture to a boil.
Reduce the heat to medium-low and allow the mixture to simmer for 10 minutes.
Remove the skillet from the heat, stir in the salsa and mash the mixture with a spoon or fork.
Spoon about a third of a cup of the bean mixture down the center of each tortilla.
Top each serving with a pinch of shredded cheese, tomatoes, lettuce, green onions, corn and plain greek yogurt.
Roll the tortilla up tightly, burrito style, and serve immediately.
For the salad version, simply place the lettuce or spring mix in the bowl, and top with all of your favorite toppings. For the dressing, squeeze the juice of half a lemon over the salad, and drizzle fresh salsa over the top, mix and enjoy.

I made the salad version for myself, while my husband enjoyed the traditional burrito…and they were equally as satisfying. Simply top the lettuce or spring mix with all of your favorite toppings. A squeeze of fresh lemon juice and salsa make a light and tangy dressing that balances the flavors without weighing down the salad.
