Movie Night Caramel Corn

At the end of a busy work week, the idea of getting dressed up to go out sometimes seems exhausting. On those Friday nights, my husband and I love to have at-home date night. Last night was a perfect dinner and movie night, since both of us were completely spent.

I wanted a sweet and salty snack for our movie time, so I decided to make a homemade Cracker Jack mix that was easy to make, and delicious to munch on.  This snack is perfect for adults, or prepare it for your kids and they will love it just the same. I added raw almonds and chopped pecans to the mix for a nutty flavor and a pinch of protein.

Homemade Caramel Corn with Almonds and Pecans

Ingredients
3 single serve bags microwave popcorn (I used smartpop kettle corn single serve bags), popped
1/2 cup unblanched almonds
1/2 cup pecan halves
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup butter (one stick...I used unsalted)
1/4 cup corn syrup
Pinch cream of tartar
1/2 tsp. baking soda
Instructions
Preheat oven to 200 degrees F
In 2 large roasting pans, or a large mixing bowl combine popped popcorn evenly with almonds and pecans.
In a separate large, heavy saucepan, stir together sugars, butter, corn syrup and cream of tartar. Bring to boil over medium-high heat, stirring constantly. Let boil 5 minutes without stirring.
Remove saucepan from heat; stir in baking soda. Pour caramel evenly over popcorn mixture, stirring to coat well.
Place popcorn mix on two-three cookie sheets so that they are evenly spread out
Bake for 1 hour, stirring every 10 minutes.
Let cool, stirring occasionally to prevent clumping.

This caramel corn mix  also makes a perfect snack to pack in lunches or give as gifts to friends. You can store the mix in an air-tight container at room temp for up to one week….if it lasts that long!
