Healthy Peanut Butter and Banana Raw Bars

Round two of homemade granola bars! My first batch, the Almond Coconut Granola Bars were so popular that I thought I would try a new creation that provides you with the same healthy benefits, and is filling and satisfying for a midmorning or post-workout snack. 

This raw bar is all natural with roasted almonds, cashews, and gluten free oats and dipped in dark chocolate. The natural peanut butter is packed with protein without hydrogenated oils and un-needed sugar. I also used all natural banana chips to add a little texture and sweetness to the power packed bar.

Ingredients
1/2 cup cashews (raw or roasted)
1/2 cup almonds (raw or roasted)
1/2 cup rolled oats (I used gluten free)
1/4 cup semi-sweet or dark chocolate chips
3 Tbsp natural peanut butter
1 1/2 cup banana chips
2 Tbsp vanilla extract
1 Tbsp coconut oil
1 Dark chocolate bar
1/4 cup whipping cream
Instructions
Combine all ingredients, except for the chocolate chips in the food processor and run until the ingredients are finely chopped and a paste begins to form.
Once the ingredients are starting to combine, add in the chocolate chips
You may have to stop and scrap down the bowl several times to insure that the ingredients are thoroughly incorporated.
Once the ingredients are combined, form into bars and place a cookie sheet lined with wax paper
Place in the refrigerator for at least 30 mins
Coat one side of the granola bar in melted dark chocolate
Place back in the refrigerator for 30 mins
Dark Chocolate
To prepare dark chocolate, place chocolate in a microwave safe bowl and heat for 30 secs
Mix and reheat in 30 second intervals until the chocolate is mostly melted
Add in the whipping cream, and whisk vigorously until smooth
Notes
keep in refrigerator until ready to eat. If you plan to take the bar with you on the go..it may soften but it will be just as good, and is safe at room temp
+If you want to eliminate the whipping cream, you can also use water to thin out the chocolate so that it is easily spreadable+
