I love experimenting with different types of cuisine. The flavors in Asian cuisine have a combination of sweet and spicy, and the best thing about most of their food is they are packed with vegetables and are super healthy.
I recently made a 10 minute meal that was exceptional! This noodle bowl is bursting with flavor and vibrant colors from fresh cucumber, carrots and sweet peppers. It is a quick weeknight fix, when you don’t have time to prepare a lengthy meal. But…just because it’s quick and easy doesn’t mean that you have to sacrifice nutrition and flavor. This meal is loaded with everything you need to satisfy your hunger, and you craving for a nutritious dinner…and there might even be leftovers for lunch!
Peanut Sauce Rice Noodle Bowl

Ingredients
Peanut Sauce:
- 3 Tbsp Creamy Peanut Butter
- 2 Tbsp white vinegar
- ½ tsp sesame seed oil
- ½ tsp soy sauce
- ¼ cup water
- ¼ cup sugar
Noodle Bowl:
- 1 box of rice noodles (you can use your favorite Asian noodle any of them will work
- just fine)
- 2 large carrots (shredded)
- 2 Persian (mini) cucumbers (peeled and shredded)
- 4 sweet peppers (red/yellow)
- Cilantro (chopped)
- Cashews
- Chili Paste
- Sriracha
Instructions
- Bring 4 cups of water to a boil
- The noodles cook pretty fast so prepare all the vegetables while the water is heating up
- Once the vegetables are shredded and the water is boiling, cook noodles as directed on the package
- While the noodles are cooking, prepare the peanut sauce
- Once noodles are finished cooking, strain out the water and put back in the sauce pan.
- Over medium/low heat, pour peanut sauce of noodles and mix to incorporate the sauce evenly throughout the noodles.
- Serve by placing the noodles in the bowl and top with all the prepared vegies
- Garnish with cilantro, cashews, Sriracha and chili paste
Peanut Sauce:
- In a sauce pan over medium heat combine suger/water and stir until no more granules of sugar are visible.
- Combine all other ingredients and continue whisking until thoroughly combined
- Once combine turn off heat and wait for noodles to finish cooking
