Shortbread and Salted Caramel Sandwiches

I am a cookie fiend…but something about shortbread cookies is completely irresistible. That something, is probably the buttery deliciousness that melts in my mouth; just the thought of the perfect crumbly texture makes my mouth water. Combine the satisfaction of the shortbread cookies with salted caramel, and you have a heavenly and accessible sandwich that you cannot help but indulge in.

These cookie sandwiches can be made with numerous fillings. I actually used the left over caramel from the recent Chocolate Cardamom cake that I made, and with the remaining cookies, I filled them with Nutella. Both were amazing, but I am always a fan of salted caramel, so those topped my list.

Shortbread and Salted Caramel Sandwiches

Serves: 25 sandwiches
 

Ingredients
Shortbread Cookies:
  • 3 sticks (1.5 cups) Unsalted Butter
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3.5 cups flour
  • 1 pinch of salt
Salted Caramel: Recipe from Browneyedbaker.com
  • 2 cups granulated sugar
  • 12 tablespoons unsalted butter, at room temperature, cut into pieces
  • 1 cup heavy cream, at room temperature
  • 1 tablespoon fleur de sel (or any other flaky sea salt)

Instructions
  1. Add the butter and sugar to a large bowl. Mix on medium speed until combined.
  2. Add in the vanilla and salt, and blend together.
  3. Slowly add in the flour and mix on low until the mixture is crumbly.
  4. Knead the crumbly mixture together to form a “dough” (it will still crumble, but should look like dough.)
  5. Wrap with plastic wrap and chill the “dough” in the fridge for 30 minutes.
  6. Preheat your oven to 350 degrees.
  7. Roll the dough out on a floured surface to ⅓ inch thickness.
  8. Cut using whatever cookie cutter or glass you wish, I used a shot glass and they were a perfect size for a sandwich cookie.
  9. Put the cookies on a cookie sheet and bake for 22 minutes or until the edges turn golden.
  10. Allow to cool completely before adding filling
