Starting your day with a cupcake may not sound like a good idea…but once you try this recipe, you will be hooked. This breakfast delight is half muffin/half cupcake and 100% nutritious and delicious.
Skipping breakfast is far too common in our busy hustle and bustle lives. But, with these cupcakes on hand, you will not have any excuse for leaving breakfast off the menu.
Recently NuNaturals, a company that promotes alternative sweeteners that are derived from Stevia, contacted me to develop and share healthy recipes for their customers as well as my blog readers. Although, I do not typically use artificial products, I was interested in their products and wanted to explore the use of them in baked goods. Through a little reading, I realized that their products are 100% natural and DO NOT contain Aspartame, Saccharin, Sucralose, high-fructose corn syrup, or sugar or any artificial sweeteners. They are low in calories and are not altered or produced through genetic engineering.
For this recipe I used their PreSweet Tagatose instead of refined white sugar. Tagatose is low in calories (6 per serving), has a Glycemic index of only 3 and is low in carbohydrates.
- 1 egg
- ½ cup Tagatose
- ½ cup canola oil
- ½ cup almond flour
- ½ cup all purpose flour
- ½ cup whole oats
- 1.5 tsp baking powder
- ½ tsp salt
- ½ cup buttermilk
- ¼ cup chopped pecans
- ¼ cup semisweet chocolate chips
- 1 cup peeled and shredded carrots (1.5 large carrots)
- Frosting:
- 4 ounces cream cheese (softened)
- ¼ cup Tagatose
- ½ cup plain yogurt
- ½ tsp ground cinnamon
- Preheat oven to 350 degree F
- Coat muffin pan with PAM or line with cupcake liners
- Beat the Tagatose (sugar substitute), oil and egg together in a large bowl
- Beat in the flour,oats, almond flour, salt, baking powder,and then buttermilk, scraping down the sides of the bowl as necessary and beating just until you have a uniform batter.
- Fold in the carrot, pecans, and chocolate chips
- Bake for 12-15 mins
- Beat the cream cheese,Tagatose and yogurt into a smooth and creamy consistency
- Add in the cinnamon
- Pipe onto completely cooled cupcakes
- Serve for breakfast or refrigerate for 1 week for a quick “on the go breakfast”
