I am always willing to try recipes from friends, and often find that some of my favorite go-to recipes are ones that others have given me. One of the doctors in my department is always telling me about the delicious baked goods his wife makes, so naturally, I asked him to share her favorite recipe with me. A few days later, I received a beautifully hand-written recipe for Molasses Cookies. The cookie turned out perfectly round and chewy, the consistency of a sugar cookie, but the flavors of a ginger snap. My entire (450 sqft) house smelled of spices that reminded me of the holidays. The ginger, ground cloves and cinnamon swirled into a cookie that is perfect for autumn or the quickly approaching holiday season. Packaging these cookies into gift bags for the holiday season would be a perfect way to show those around you how special they are. Thank you to Darlene Scott for a recipe that will definitely become a holiday staple in my family and hopefully each of yours as well.
- 4 cups All-purpose unbleached flour
- ½ tsp salt
- 2¼ tsp baking soda
- 2 tsp ginger
- 1¼ tsp ground cloves
- 1¼ tsp cinnamon
- 3 cups sugar
- 1 cup unsalted butter (room temp)
- ½ cup unsulfered molasses
- 2 eggs
- Preheat oven to 325
- Lightly grease 2 baking sheets
- In medium bowl, sift together flour and spices
- In stand mixer bowl, fitted with paddle attachment, beat butter and sugar until fluffy (3-4mins)
- Beat in molasses
- Add eggs one at a time until each is fully incorporated
- Gradually beat in flour mixture and combine well.
- Place a small amount of sugar into a small prep bowel.
- Form into 1½” (1½ tsp if you are measuring) balls.
- Roll each dough ball in sugar
- Arrange about 4″ apart (the flatten out quite a bit while cooking)
- Flatten each ball slightly, with the bottom of a glass (dipping the glass is
- sugar will help avoid it from sticking to the dough)
- Bake approx. 10½ mins or until golden brown.
- Cookies should be soft when baking is complete
- Transfer with metal spatula to cooling racks
