Molasses Cookies

I am always willing to try recipes from friends, and often find that some of my favorite go-to recipes are ones that others have given me. One of the doctors in my department is always telling me about the delicious baked goods his wife makes, so naturally, I asked him to share her favorite recipe with me. A few days later, I received a beautifully hand-written recipe for Molasses Cookies. The cookie turned out perfectly round and chewy, the consistency of a sugar cookie, but the flavors of a ginger snap. My entire (450 sqft) house smelled of spices that reminded me of the holidays. The ginger, ground cloves and cinnamon swirled into a cookie that is perfect for autumn or the quickly approaching holiday season. Packaging these cookies into gift bags for the holiday season would be a perfect way to show those around you how special they are. Thank you to Darlene Scott for a recipe that will definitely become a holiday staple in my family and hopefully each of yours as well.

Molasses Cookies

Ingredients
  • 4 cups All-purpose unbleached flour
  • ½ tsp salt
  • 2¼ tsp baking soda
  • 2 tsp ginger
  • 1¼ tsp ground cloves
  • 1¼ tsp cinnamon
  • 3 cups sugar
  • 1 cup unsalted butter (room temp)
  • ½ cup unsulfered molasses
  • 2 eggs

Instructions
  1. Preheat oven to 325
  2. Lightly grease 2 baking sheets
  3. In medium bowl, sift together flour and spices
  4. In stand mixer bowl, fitted with paddle attachment, beat butter and sugar until fluffy (3-4mins)
  5. Beat in molasses
  6. Add eggs one at a time until each is fully incorporated
  7. Gradually beat in flour mixture and combine well.
Assembly
  1. Place a small amount of sugar into a small prep bowel.
  2. Form into 1½” (1½ tsp if you are measuring) balls.
  3. Roll each dough ball in sugar
  4. Arrange about 4″ apart (the flatten out quite a bit while cooking)
  5. Flatten each ball slightly, with the bottom of a glass (dipping the glass is
  6. sugar will help avoid it from sticking to the dough)
  7. Bake approx. 10½ mins or until golden brown.
  8. Cookies should be soft when baking is complete
  9. Transfer with metal spatula to cooling racks

Notes
avoid overcooking- they should be the consistency of sugar cookies…not ginger snaps :)
