Making sweet treats that remind me of my childhood days always puts a smile on my face. I remember the days when I could eat all the cookies I wanted, without ever thinking about how many miles I would have to run to work it off. I vividly recall the many days of after school snacks that included stacks of oreos and oatmeal cream pies with a huge glass of whole milk. My sister would tell me “I can’t wait until you can’t eat like that anymore.” Well that day has come..but every now and then, you have to indulge and relive your childhood memories. One of my best friends from dental school, Rheanna, gave me a fantastic recipe for homemade oatmeal cream pies. They have a nutty flavor and texture, with a subtle infusion of vanilla and cinnamon, that brings you back to the days of Little Debbie Cream Pies. I even added a drizzle of milk chocolate…because everything is better with a little chocolate.
- ¼ cup unsalted butter (room temp)
- 1 cup brown sugar (packed)
- ½ cup white sugar
- 1 egg
- 2 tsp vanilla
- 1½ cup unbleached flour
- 1 tsp baking soda
- ½ tsp salt
- ¼ tsp ground cinnamon
- 2½ cups uncooked rolled oats (quick oats)
- ½ cup unsalted butter
- 2 cups powdered sugar
- 2 tsp milk
- 1 tsp vanilla
- Pre-heat oven to 375
- Beat butter and sugars in a stand mixer with paddle attachment until creamy.
- Add egg and vanilla
- Sift together flour,oats,baking soda and salt
- Gradually add the flour mixture to the sugar mixture, and beat on medium speed until fully incorporated.
- Use a cooke scoop or tsp to make each ball the same size.
- Place cookies on cookie sheet lined with parchment paper
- Slightly press each cookie in the center to flatten the dough
- Bake for 8-10 mins until golden
- Allow cookies to cool completely prior to making sandwiches
- Whip butter and milk together until fluffy (approx 3-4 mins)
- Scrap down sides of bowl with rubber spatula
- Add powdered sugar and vanilla and mix until fully incorporated
- Scrap down sides of bowl with rubber spatula
- Once the cookies have completely cooled, use a small amount of the cream filling to apply to one cookie, and gently place a similar sized cookie on top to make a perfect sandwich. If you wish to drizzle milk chocolate on top, melt a milk chocolate chunks over a double boiler or in the microwave in 30 second intervals. Once the chocolate is completely melted, use a spoon to drizzle a small amount of chocolate over each cookie.
