Ok…so I have admittedly confessed I have a sweet tooth, but my ultimate weakness is a simple homemade chocolate chip cookie. As hard as I may try, it is impossible for me to walk by the cookie jar, without taking a little bite. My dad taught me a trick for “snacking”…instead of eating an entire cookie, just take small bites throughout the day until you have eaten half a dozen or more. Anyway…now that I am thinking about cookies, I am debating whether or not to whip up this recipe again. I normally make basic chocolate chip cookies, and they are quite delicious, but this batch was extra scrumptious because I added two types of chocolate and sweetened shredded coconut. This combination was amazing and possibly the most delicious cookie you will ever eat.
- ½ cup unsalted butter (room temp)
- ⅔ cup brown sugar
- 1⅓ cup white sugar
- 1½ teaspoon vanilla
- 1 cup chopped nuts (I used pecans, but you can substitute you favorite)
- 2 eggs
- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 bag (12oz) chocolate chunks (I used semisweet for this batch)
- ½ bag (6oz) white chocolate chips
- ¾ cup shredded sweetened coconut
- Cream together the butter, eggs, sugar, and vanilla in stand mixer with fitted paddle attachment
- Sift dry ingredients together.
- In the stand mixer bowl, stir together the wet ingredients and the dry ingredients
- With a rubber spatula, fold in the chocolate chunks/chips, coconut, and nuts.
- Bake 325 for 10 to 12 minutes on a lightly greased cookie sheet (with parchment paper) for easy clean up
I made these cookies and they were amazing. I had to cook them for 20 min instead of 10 and I did not add coconut because my husband doesnt care for it. My husband is a cookie connisuer and really enjoyed these.

These cookies are the perfect consistency! They turned out fabulously after baking them for 10 min. I substituted Milk choc. chips bc I like everything super sweet! Next time I will follow the recipe and use the semi sweet bc with the milk choc.chip they were a bit too sweet, even for me. I omitted the nuts. Also, I used tablespoon size cookies and it made 50 cookies. I brought 30 cookies into my office and they devoured them with in 2 hours. I will definitely make these again. A very easy recipe with GREAT results!!
I made these last night and then brought half of them into work today, everyone at worked loved them! I was thinking about bringing some more in tomorrow but when I came home my boyfriend had eaten the whole other half! I did get to eat a few, don’t worry, and they were outstanding!!!!! And my favorite food is chocolate chip cookies and these by far are the best I have ever had!
